Step-by-Step Instructions
Part 1: The Marinade
- Preparation: Ideally, prepare the marinade the evening before you plan to cook.
- Mix: Add 1.5 cups of water to the Signature 1780 marinade powdered concentrate and mix well.
- Marinate: Place the chicken and marinade in a resealable bag. Let it marinate in the fridge overnight, or for a minimum of 8 hours. For best results, a marinating time of 12 to 16 hours is recommended.
Part 2: Coating and Cooking
- Coat: Remove the chicken from the marinade and dredge it thoroughly in Grampy D’s coating mix. Use your hands to work the coating into the chicken. One pack should coat 8 to 10 pieces of bone-in, skin-on chicken.
- Rest: Place the coated chicken on a rack and let it rest for 30 minutes. This helps the coating adhere to the chicken.
Cooking Methods
Deep Frying (Recommended for best results)
- Heat fresh vegetable oil in an electric fryer to 325°F.
- Fry bone-in chicken for 15 minutes. Cook only 3 to 4 pieces at a time to maintain the oil temperature.
- Halfway through cooking, use tongs to roll the chicken over for even cooking.
- Once cooked, remove the chicken from the fryer and let it rest on a rack for 5 to 7 minutes before serving.
- Stovetop Option: If you don’t have an electric fryer, fill a large pot halfway with vegetable oil and use a thermometer to maintain a temperature of 325°F over medium-high heat.
Optional Cooking Methods
- Air Fry: Add one tablespoon of oil to the pan. Cook at 360°F for 40 minutes, turning the chicken at the halfway point.
- Oven Roast: Lightly oil the bottom of a pan and bake at 360°F for 40 minutes.
